That default is used in basically one situation: when an admin  
creates a new story, it sets a default value for the display status.  
In all other cases, the story's display status is set to something  
appropriate. If you change the default, it has no effect on any of  
the existing stories, as they already have a display status assigned  
to them.

For example, if a regular user creates a new story, the display  
status is set according to the section permissions: in user diaries,  
it's set to display section only, if you're using a voting queue it's  
set to "submitted", which means it isn't published yet, and so on.

If an admin (you) changes the display status of a single story, it  
changes that only that one story's status. You could, for example,  
set a user diary to "always display", in which case it would appear  
on the front page of the site. No other diaries would be affected,  
and no change to the default would be needed.
